Safety First
The preparation of food and the food industry is naturally covered by a good deal of legislation to ensure the safety of employees and consumers. Some legislation which deals with food safety also covers the same ground as health and safety.
Food Safety Act 1990
The Food Safety Act 1990 created the all-encompassing offence of selling or supplying food which does not meet food safety requirements and allocates enforcement powers, usually to the local authority.
The Food Safety (General Food Hygiene) Regulations 1995
These regulations are made under the Food Safety Act and set out basic hygiene rules to ensure that:
- Food is supplied or sold in a hygienic way
- Hazards to the safety of food are identified
- Identify steps within an operation that are critical for food safety
- Food safety rules are in place, maintained and reviewed
The Food Safety (Temperature Control) Regulations 1995
These regulations cover the storage, supply and preparation of food that is likely to be contaminated by bacteria or develop toxins if not stored at the correct temperature - below 8 or above 63 centigrade.
